After purchasing fresh truffles, directly from the “Tartofaner”, they are immediately sorted, and based on their intended use, one part is shipped and the other is processed.
The fresh truffle for sale is brushed and cleaned using a small spatula, which allows the removal of soil resi-dues. The truffle intended for processing is carefully washed with appropriate machinery that sprays cold water pressure jets, eliminating any remaining soil residue.
The truffle is now ready to be used in different productions! All our products are the result of ancient family recipes.
The processing, despite the use of cutting-edge machinery that guarantees the maximum hygienic safety of the entire production cycle, is still carried out in an artisanal manner and uses highly selected and top-quality raw materials.
Given that we do not use preservatives or dyes, to guarantee and obtain a long preservation of the products, they are sterilised, using a boiler. The products are then placed in an autoclave and sterilised at a temperature of 121°C. Once the products are labeled they are ready to be sold. All our creations, as well as those in the best restaurants, wine bars, delis in Italy and all over the world, can also be found in our store.
